Tasting notes

A hedonistic spectrum of ruby grapefruit, orange blossoms, honey, glace pineapple and white peach supported by a seamless line of lime zest acidity.

Viticulture

The Viognier vines used for this opulent wine are planted in a north-south row direction in Oakleaf soils. This enables maximum sunlight exposure for the bunches.
A yield of 4 tons per hectare was produced.

Harvest

Grapes were handpicked on 12 February 2009
Bunches were picked at full ripeness.

Sugar 29.10 Degrees Balling
Acid 5.0 g/l
pH 3.89

Wine making

Whole bunches were pressed using dried ice to preserve all flavour.
Juice was settled for 48 hours at 10 degree Celsius                         
A sweet wine commercial yeast strain was inoculated and fermented for 22 days.
The fermentation was arrested, then lightly fined and filtered for clarity prior to bottling.

Deze wijn wordt als dessertwijn aanbevolen maar is ook heel lekker bij bijvoorbeeld barbecue. Wel ijskoud drinken deze wijn en het is jammer dat deze wijn maar in kleine flesjes zit, maar misschien is dat maar goed ook. je blijft aan deze wijn nippen tot de hele fles leeg is. De wijn zit in een grappige verpakking zodat je de wijn ook makkelijk als kado weg kunt geven. Maar ook heel lekker om jezelf kado te doen.
