Tasting Notes
Appearance Deep dark ruby red centre and cherry red edge.
Nose The nose is full bodied with fruit from cassis and black current. The wood is balanced with hints of vanilla and cedar box wood note.
Palate The wine is dry with big firm ripe subtle tannins. The follow through from the nose is fulfilled with intense dark and red berry flavours. The integration of the wood, alcohol and the ripe soft tannins create a solid platform of complexity and depth which will allow the wine to age with multiple layers.
Food Notes
An exceptional wine, expressing the true characteristics of Cabernet Sauvignon. Enjoy with a creamy and full flavoured cheese or with steak, oxtail and warm rich bredies.
The grapes were harvested in the Devon Valley above the hotel from Lorna Hughes’s Stone Hill Farm. This superb 14 year old block is hedged trellised, south east facing and managed carefully to achieve optimal ripeness.
This single block produces on average between 8 to 9 tons per hectare. The grapes are cold soaked for as long as possible below 14°C and then inoculated with a selected yeast to ferment at 25-27°C till pressed.
Once pressed the wine is racked directly to 80% new and 20% first fill 300 litre French oak barrels. The wine is racked 3 times in the year and is matured in wood for 12 months.
